Creamy & Healthy Tahini Salad Dressing
A great salad needs a great salad dressing. If you're looking for that guilt-free, creamy dressing to top off your delicious salad, this is it! It's a simple and yummy dressing that is a nice added Mediterranean taste to just about any dish. Adding ice-cold water is the key step to getting the thick and creamy consistency you crave, without the mayonnaise!
Equipment
- Whisk
- Medium size bowl
- Measuring spoons and cups
Ingredients
- 1 cup extra-virgin olive oil Healthier alternative: substitute with 1/2 cup of water and 1/2 cup of extra-virgin olive oil
- 1/2 cup tahini
- 4-6 tbsp lemon juice, to taste
- 4 tsp Dijon mustard
- 4 tsp raw organic maple syrup or honey Use maple syrup to make recipe vegan
- 1 tsp fine sea salt
- 1 tsp ground black pepper, to taste
- 4 tbsp ice-cold water, more as needed This step is KEY to getting a super creamy consistency
Instructions
- Using a measuring cup, combine olive oil, tahini, lemon juice, mustard, maple syrup or honey, and S&P.
- Whisk ingredients until thoroughly blended.
- Add cold water and whisk again.
- The dressing should become creamy once the cold-water has been added.
- Taste and add more lemon juice and pepper, if desired.
- Add more cold water, if dressing is too thick.
